A Taste of Blue Earth: The Thinking Behind Our Conscious Crumble

A Taste of Blue Earth: The Thinking Behind Our Conscious Crumble

Two seasonal flavours, one food truck and a fresh perspective on the food we love.

What if comfort food could be made a little more consciously, without losing any of the flavour?

That was the idea we brought to Blue Earth Summit 2026.

Over four days, Gertrude, our NUUDA food truck, became a meeting point for people to taste, connect and discover how nourishing food can be just as colourful, comforting and delicious.

And at the heart of it all? Our Conscious Crumble.

Two Seasonal Flavours, Naturally Delicious

Think warm Apple & Cinnamon, fragrant with spice, alongside the rich purple tones of Pear & Blackberry. Two seasonal flavour combinations, each bringing together the natural sweetness, colour and character of fruit.

Our Conscious Crumbles were entirely plant-based and vegan, made with thoughtfully chosen ingredients including coconut milk and coconut sugar.

And because no crumble is complete without custard, we served ours with a creamy vanilla custard, made with fresh vanilla and a touch of turmeric, adding a beautiful golden colour to every serving.

From the deep purple of blackberries to the golden warmth of turmeric, the colours came from the ingredients themselves. No need to overcomplicate something delicious when nature already brings so much to the table.

It was our way of celebrating familiar comfort food through a more considered approach to ingredients and preparation.

A Little Taste of Blue Earth

From the golden vanilla and turmeric custard to the rich colours of our fruit-filled crumbles, there was plenty of goodness being served from Gertrude.

Here's a little glimpse of what we got up to at Blue Earth Summit.

Good food, thoughtful ingredients and a few lovely moments from Blue Earth Summit 2026.

Good Food Shouldn't Be Complicated

At NUUDA, we believe nourishing food should fit naturally into real life.

That means making room for the foods we enjoy, whilst being more considered about the ingredients we use and how they're prepared.

Our Conscious Crumble was a small example of that philosophy.

By combining seasonal fruit, plant-based ingredients and comforting flavours, we wanted to show that thoughtful food doesn't need to feel restrictive or complicated.

It's the same thinking that goes into our chef-prepared, nutritionist-designed meals: real food, recognisable ingredients and nothing unnecessary.

Because eating well shouldn't mean giving up the meals, flavours and little moments of comfort we love.

Looking Beyond What's on the Plate

At NUUDA, sustainability isn't an afterthought. It's a non-negotiable.

From field to freezer to fork, we believe every stage of the food journey offers an opportunity to make more thoughtful choices.

We prioritise local British producers and suppliers who share our commitment to quality and responsible sourcing. By considering where our food comes from and how it's produced, we aim to make choices that support both people and the planet.

But our responsibility doesn't stop once the ingredients reach our kitchen.

Making More of Every Ingredient

We believe good food deserves to be valued, not wasted.

That's why we work to minimise waste across our kitchen and supply chain.

Any inedible food waste is sent to ReFood, where it's transformed into renewable energy and liquid fertiliser, helping create a more circular food system.

To date, we've saved 15 tonnes of CO₂ emissions through our waste-reduction practices.

Our frozen-first approach also helps reduce waste at home, allowing you to enjoy nourishing meals when you need them, rather than worrying about ingredients going unused.

From Our Kitchen to Your Doorstep

Thoughtful food choices shouldn't end when a meal leaves our kitchen.

We use DPD's carbon-neutral delivery service to bring our meals to your doorstep, frozen-fresh and ready whenever you need them.

Because the journey from our kitchen to your table deserves just as much consideration as the food itself.

For us, creating better food means looking at the whole picture: how ingredients are sourced, how meals are prepared, what happens to waste and how food reaches the people enjoying it.

Why the Little Choices Matter

Blue Earth Summit brought together people and businesses exploring how to create a healthier, more sustainable future.

For us, that conversation begins with food. Our Conscious Crumble was a reminder that making more considered choices doesn't always require completely changing the way we eat. Sometimes, it starts with something as familiar as dessert.

The natural colour of blackberries, the warmth of cinnamon, the golden hue of turmeric. The richness of coconut milk.

Simple ingredients, thoughtfully brought together to create something comforting and delicious.

And beyond the recipe, there's a bigger picture: prioritising local suppliers, reducing unnecessary waste and making choices that consider the food journey from beginning to end.

We believe small decisions, made consistently, can help create meaningful change.

Little Crumble, Bigger Conversation

To everyone who stopped by Gertrude, enjoyed a warm crumble or joined us for a conversation, thank you.

Blue Earth Summit was a wonderful reminder of why we do what we do: to make nourishing food more accessible, enjoyable and thoughtfully prepared.

And if there's one thing our Conscious Crumble showed us, it's that delicious food and more conscious choices can sit beautifully together.

Here's to more colour, more flavour and more thoughtful food, one delicious bite at a time.
