10 Questions with NUUDA’s Head Nutritionist, Sam Bourne: On Gut Health, Balance and Living Nourished

1. Sam, have you always been interested in nutrition and wellness?
Not at first. I actually started out in design, but even back then, my final project was about food. My journey really began after years of struggling with digestive pain that medicine couldn’t solve. Changing my diet completely transformed my health and my mindset, and from there I was hooked.
2. What did you study, and what surprised you most?
I studied Naturopathic Nutritional Therapy at CNM in London, and it opened my eyes to how interconnected everything is: mood, immunity, energy, and digestion. It still surprises me how little attention nutrition gets in mainstream healthcare when it’s so fundamental to how we feel.
3. Have you seen diet truly transform lives?
Every single day. From energy levels and focus to mental clarity and skin health, the body responds when you feed it well. The biggest “wow” moments are when clients say they didn’t realise they could feel this good.
4. What do you think about diet trends like Keto and Veganism?
Trends come and go, but balance always wins. I’m a big believer in a flexitarian approach: mostly plants, good fats, mindful proteins, and minimal processing. Food should be sustainable, joyful, and nourishing, not stressful.
5. What’s the hardest part of being a nutritionist?
Saying no. I always want to help everyone. Keeping up with the science is constant, but that’s what makes it exciting. Nutrition is evolving faster than ever, and that’s what keeps it so fascinating.
6. What do people come to you for most?
Gut health. It affects everything: mood, energy, sleep, immunity, and even skin. Once we support digestion, everything else tends to fall into place.
7. Have you seen a change in how people think about nutrition?
Definitely. People are more informed and more empowered than ever. We’re finally moving away from quick fixes and into sustainable nourishment, eating for long-term energy, mood, and mental clarity, not just for weight.
8. What does a week of meals look like for you?
Lots of plants, colour, and fibre. Think smoothies with kefir, leafy greens, beans, wild fish, and fermented foods. I eat mindfully, rest my digestion a few evenings a week, and always listen to what my body needs.
9. Any foods you personally avoid?
Gluten, refined sugar, and anything ultra-processed. I’m also mindful of caffeine and alcohol. It’s less about restriction and more about feeling my best, with calm energy, a clear head, and a happy gut.
10. And your ultimate indulgence?
Mille-feuille with strawberries. When my daughter made one for my birthday, I had no guilt, just joy. Food should make you feel good, body and soul.
